Anyone want to share recipes?
I am just now (at 45 lol) starting to really enjoy cooking. I guess the Food Network is a big influence. Anyway, would anyone like to post some recipes on here that may help my culinary skills?

YOU ARE FROM AUSTIN TEX !!!!!!! . you are suppose to be giving us Texas style BARB-Q and chili recipe's . If you ask some of your family and friends for a few barb-q and chili recipe's , i'll trade ya and i'll give ya any kinda recipe i make . And i MAKE stuff .

COW PATTIES
2 cups white sugar
5 tablespoons unsweetened cocoa powder
1/2 cup unsalted butter
1/2 cup crunchy peanut butter
1 teaspoon vanilla extract
3 cups quick cooking oats
1/2 cup chopped walnuts (nuts can be eliminaated, if desired)
1/2 cup milk
DIRECTIONS
Cover baking sheets with wax paper and set aside.
Combine sugar and cocoa in a large saucepan. Stir in milk, butter and peanut butter. Cook and stir over medium heat until butter melts and mixture is combined, then for an additional about 20 seconds. Remove from heat.
Stir in the vanilla, oats and nuts, and mix thoroughly. Take a teaspoon and scoop out a spoonful of the mixture; drop the spoonful onto the waxed paper-covered baking sheet. Repeat with the rest of the mixture. Place in the refrigerator until the cookies are cooled and set. Store the cookies in an airtight container.Last edited by AlphaRam; -01-18-2009 at 09:06 PM.

ENCHILADA CASSEROLE
1 1/2 lbs lean hamburger
1 Large can Rosarita Refried Beans
2 Cups Cheddar Cheese
2 Cups Monterey Jack Cheese
2 Large Cans Enchilada Sauce
1 Small can diced jalepeno peppers (optional)
1 Small can sliced olives
1 Can of Sweet Kernal Corn
1 Chopped Onion
1 Pkg Corn or Flour Tortillas
Chopped green onion
Brown hamburger and add in refried beans, onion and jalepeno peppers.
In casserole dish layer:
Enchilada sauce
tortillas
hamb/bean mixture
sprinkle corn over layer
cheeses
And repeat over again with the top layer being cheese, olives and chopped green onion.
Bake for about 30 minutes 325 degrees
Don't get too carried away with the enchilada sauce, if you do, everything floats and it gets mushy.

Here's one of mine. Its fool-proof and very good.
Miso-Ginger Salmon
Ingredients:
1 large salmon filet w/skin removed (may substitute other fish such as tilapia, halibut, sole or flounder)
2 cups miso soup (powder or paste mixed w/warm water)
4 tbsp ginger paste or powder
4 tbsp tamari soy sauce
1 tomato (diced)
1 bunch green onion (chopped)
Preheat oven to 400 degrees. Combine miso soup, ginger and soy sauce. Pour into large glass/lucite baking pan. Place fish in pan. Cover with tomato and green onion. Bake (time depending on thickness of fish) until cooked through (20-30 minutes for a large piece of salmon), basting occasionally. Serve with rice or Asian noodles (i.e. lo mein, udon).

I also recommend the Weber Smokey Mountain Cooker. Its a simple charcoal/water smoker (you can order one on Amazon for under $200.00). I've made smoked chicken and turkey on it and it comes out awesome.

If you are tuning into The Food Network then I am sure you have heard of 30-Minute Meals With Rachael Ray (She pretty hot IMO). Well it is a good show and on their website they have a lot of recipes just incase you need to fix up a quick but tasty dinner. Some sound good and some not as much, but their great. I tried some but I am a young cook (only 18) and I need more practice. You should try them out and watch some episodes too.
