I could really go for some nachos
Anyone else here love nachos like I do? I'm not talking about some chips with melted cheese on them. I'm talking about chips with tomatoes, jalapeños, cheese, sour cream, guacamole, onions... the works.
I have to admit that I think the best nachos I've had around here have been from Applebee's. Anyone have any suggestions for finding good nachos, or some good local restaurants in your area that serves some great nachos?

Nick.Here in calif.You might as well be in Mexico.You have nachos you've never heard of.applebees is second rate at best.You can make great nachos:Use your fav. cheese,peppers also try Pico de gallo,and chilli verde,or chilli colarado.

If the best nachos you have ever had came from Applebee's, then you are in the NFL Europe league of nachos.
Take a sabbatical to Central Texas and discover what nachos are really like.

I believe it was UH (may have been KKG { Matt, who snagged a job working with the RAMS during training camp}) that provided this "recipe" to me, and I use it to this day.
1 lb ground beef
1 can refried beans
1 jar salsa (your preferred spice level) (15oz?)
1 jar Pecante (15oz?)
Brown GB and drain
mix in Pecante and RF Beans and heat to boil (if you want to call it that)
remove from heat and stir in salsa
serve over chips with your favorite toppings

I LOVE nachos and here is one of my favorite recipes:
Layer:
Ranch style beans with jalapenos. Then a layer of nacho cheese Doritos, then a layer of your favorite meat (shredded beef, chicken, pork or hamburger). Next layer cheddar and Monterey jack cheese (LOTS). Next, more chips and LOTS more cheese, heat and then top with green onion, tomatoes, cilantro, guacamole and salsa. The spicier, the better!!!

Not Nacho's, but Queso, great for game day:
2 Blocks Velveeta style cheese cut in cubes
2 pounds Spicy Sausage
1 can Rotel Hot and Spicy
2 Large Jars Picante Sauce or Salsa (Spiced as you like)
1. Brown sausage and drain.
2. Put cubed cheese, sausage, Rotel and 1 jar of salsa into crock pot set on high.
3. Stir to mix ingrediants as cheese melts.
4. If the sauce is too thick add more salsa to thin.
Serve in bowls with several bags of chips.

This is my personal favorite and it is so simple even I can't screw it up.
1 block of Velvetta
2 cans of Hormel Chili
As much Tabasco as your taste buds will allow
Put it all in a crock-pot and stir every few minutes so the chili doesn't burn. It's real thick so you will need a thick chip to go with it.

How about my Guacamole recipe:
Two large ripe avocados
1 cup salsa
1 cup sour cream
1 tomato (diced)
fresh cilantro (finely chopped)
5-6 black olives (finely chopped)
tobasco (optional)
Mash the avocados with a fork or potato masher until mostly smooth (good to leave a few small chunks). Stir in sour cream (should cause it to turn a pleasant light green color). Stir in salsa (use a little at a time - don't put in so much that it loses its overall green color!). Stir in tomato, cilantro and olives. Add tobasco to taste if desired.
